Gibson's Grove

Gibson's Grove is located in Forbes, NSW. Starting off in 1996 with the planting of about 300 trees, Greg and Clare Gibson’s oil estate (Gibson’s Grove) now boasts over 2000 trees producing around 50 tonnes of oil and 12 tonnes of table olives a year. The harvest generally takes place around June each year, guided by the condition and ripeness of the olives at the time; no short cuts are taken to speed up the process. The method of harvest depends on the end use of the olives – table olives are hand-picked, while olives for pressing (olive oil) are mechanically shaken from trees. 


Gibson’s Grove Olives are naturally pickled in brine for nine months before being packaged with brine, a little vinegar, extra virgin olive oil, fresh rosemary and garlic.
