Award Winning Goat Cheese and Cultured Butter from Hindmarsh Valley Dairy

Hindmarsh Valley Dairy operates on the Fleurieu Peninsula in South Australia and specialises in the production of a range of goat milk cheeses and dairy products based on traditional French, Italian and Swiss recipes. Production is based on artisanal principles where the cheeses and dairy products are made on farm from the milk received from a co-located dairy and the milk of their own animals.

The cheeses are produced from the morning milk each day. The milk is still warm from the goats when it is put into the cheese vats. Goat milk is an extremely “fragile” milk in its raw state. The fat molecules in the milk are small. Storage of the milk or agitation of the milk through pumps or transportation results in the development of strong gamey flavours and odour.

By using the fresh warm milk they produce a cheese with clean and fresh flavours. All Hindmarsh cheeses are hand ladled into the baskets and draining hoops. This minimises shattering of the curd and as a result the cheeses typically have a smooth and silky texture.
